Beyond French cuisine, I discovered "the beginning of Europe"—Portugal.
Why is the chef of Au et Cel, who has honed his skills in French cuisine, now taking on Portuguese cuisine?
This is because we have turned our attention once again to Portugal, the country that first encountered and greatly influenced Japanese food culture.
Luis Frois, a Portuguese missionary, visited Oda Nobunaga, who bestowed the name "Gifu" upon the area.
The Nanban culture they brought with them manifested itself in dishes and sweets such as tempura, nanbanzuke (pickled vegetables), castella (sponge cake), and konpeito (sugar candy).
It has blended with the Japanese palate and is now firmly established as an integral part of Japanese cuisine.
You can't talk about Japanese food culture without mentioning Portugal.
The cormorant fishing culture protected by Lord Nobunaga is also part of the scenery of Gifu that Frois would have seen at the time.
It was only natural for us, who were cooking in that location, to think of Portugal.
Portugal is a country bordered by the sea. It boasts an abundance of seafood, rice-based dishes, and simple seasonings that bring out the natural flavors of the ingredients.
The chef was strongly drawn to its flavor, which evoked a sense of nostalgia.
It's a taste of "another Europe" that gently resonates with the Japanese heart.
A chef who has mastered French culinary techniques deliberately turns his attention to Portugal.
Perhaps it's not about "technology," but about returning to the "origins."
A history has connected Gifu and Portugal. We will weave that connection once again in Gifu.
