Technique: Using yeast from Gifu Prefecture, this sake is entirely handcrafted by the brewer, who handles everything from start to finish, from brewing to bottling. It is unpasteurized, unfiltered, and undiluted, capturing the pure flavor of the rice.

Brewing water: Groundwater from the Nagara River, drawn from approximately 100 meters underground.
Technology: A distinctive feature is the "four-season brewing" method, which allows them to produce fresh, unfiltered, unpasteurized sake all year round.
"Funakuchi-tori" is a type of sake made by taking only the first part that flows out, and it has a rich umami flavor and a noticeable effervescence from the fermentation process, adding depth to the taste when paired with food.

Brewing water: From a pure water source originating from the melting snow of the Northern Alps.
A Grand Cru-style sake that harmonizes beautifully with the food.
Technique: This sake is made using only the "nakadori" portion, which is the clearest and has the most balanced aroma and flavor.
The balance of aroma, flavor, and clarity is beautiful, and the rich, concentrated rice flavor, unique to undiluted sake, spreads throughout the palate. Furthermore, a slight effervescence provides a delicate sensation and depth on the tongue, allowing you to experience the multi-layered flavors that are characteristic of unfiltered, unpasteurized sake.
This sake goes beyond mere "crispness," possessing a multi-layered depth and rich complexity, making it a beautiful pairing with the delicate structure and depth of French cuisine.
■Sharp and extremely dry
Will it impress with its crispness, or leave a lasting impression? Sharpness or serenity—two kinds of crispness. A drink that cuts, and a drink that disappears. A momentary crispness, and a lingering crispness.

Brewing water: Kikusui Spring, one of Japan's 100 best waters , is an ultra-soft, crystal-clear water with a legend of Yoro Falls .
Technique: "Ranjatai" is the finest fragrant wood (agarwood) in Japan, housed in the Shōsōin Treasure House, and is the most famous symbol of fragrance in Japan. One of the people who actually cut a piece of it was Oda Nobunaga. It has an elegant fragrance reminiscent of pears and white peaches. When you take a sip, a soft sweetness and a transparent umami flavor spread in your mouth, and then it quietly disappears, leaving behind minerals and a subtle bitterness. It is like a beauty that has been stripped away to its essentials.
It's a flavor that leaves a lasting impression, even without being overly assertive.

A passionate sake brewery; aged sake imbued with time.
Since the 1960s, we have focused on "aged sake," and through trial and error, we have now reached a point where we are known as "Daruma Masamune, the name to know about aged sake."
It is one of Gifu's proudest sake breweries.
The passion to revive aged sake, the patience to create it over many years, and the love to bring smiles to people's faces with aged sake.
All of these sentiments are embodied in [Daruma Masamune].
In wine, aging adds depth to various aromas and flavors, providing enjoyment and a lingering aftertaste.
Aged sake also offers this enjoyment; pairing it with food creates a new kind of culinary harmony.

The one and only Daruma Masamune, born from the terroir of Gifu.
[Preparation Water] Groundwater from the Mugigawa River, a tributary of the Nagara River.
[Rice] Mainly Nihonbare (Gifu Prefecture/Toyama Prefecture). For the koji rice, we use "Gohyakumangoku" from Gifu Prefecture.
[Growing up in Gifu] The Miwa district of Gifu City is rich in nature and has many historical sites.
As it slowly matures in that location, a beautiful color gradually emerges from the amino acids and sugars derived from the rice.
The flavor of the alcohol becomes milder.

For those who are trying aged sake for the first time, this three-year-old is the one I would recommend you try first.
Its mellow, nutty aroma and creamy taste will enhance your dishes.
Since it's summer, we'll prepare it chilled, but please enjoy the change in flavor by letting it come to room temperature.
Shigeri
The distinctive aroma of the oak barrels and the taste of the aged spirit are exquisitely delicious, like vanilla and honey.
But it's not overly sweet.
Shigeri is a place where French cuisine is a perfect match.
The oak aroma complements the buttery scent, deepening the finish.
